Job description

A luxury hotel in Port Moresby, Papua New Guinea is looking for a talented and enthusiastic Restaurant Manager (Full-time)


  • Coordinate daily Front of the House and Back of the House restaurant operations
  • Hire, train, and supervise restaurant employees
  • Deliver superior service and maximize customer satisfaction
  • Respond efficiently and accurately to customer complaints
  • Regularly review product quality
  • Appraise staff performance and provide feedback to improve productivity
  • Maintain safety and food quality standards
  • Ensure compliance with sanitation and safety regulations
  • Control operational costs and identify measures to cut waste
  • Process payroll and maintain all relevant records
  • Implement policies and protocols that will maintain future restaurant operations
  • Organize and supervise shifts
  • Work closely with a new chef (in terms of menus, presentation and service)
  • Estimate future needs for goods, kitchen utensils and cleaning products


  • Indonesian citizen
  • English writing and verbal communication skills
  • Proven experience working in a fine dining restaurant as a manager
  • Experience with various liquors
  • Extensive food and beverage (F&B) knowledge, notably Australian Wine
  • Familiarity with restaurant management software
  • Strong leadership and people skills
  • Knowledge of working in general restaurant operations, including personnel management, food planning and preparation, purchasing, sanitation, health codes and security
  • Strong interpersonal skills
  • Extremely organized and detail-oriented
  • Ability to professionally address customer complaints
  • Ability to manage operating costs in accordance with budgets
